Avocado Veggie Sandwich
Avocado is truly the king of veggie sandwich recipes.Â It is easy and outrageously delicious.Â There are quite a few variations of this sandwich that I have sampled in differentÂ natural foods cafeâ€™s while on my travels.Â Â I have made these for guests on many occasions and it always goes over in a very big way.Â Â This is a fairly simple sandwich to make.Â It starts with layering a whole wheat bread slice with a seasoned avocado spread.. then is topped with layers of cucumbers, green pepper, and tomatoes, monterey jack cheese and alfalfa sprouts… all on whole wheat bread. Itâ€™s totally outrageous!
Whole wheat bread
Cucumbers (peeled & sliced)
Green and /or red peppers
Sliced Monterey Jack Cheese – (or vegan cheese)
PREPARE:Â Scoop out avocado and mash in a bowl till smooth.Â Season with garlic salt and chopped green onion to taste. Slice remaining veggies and cheese and set aside for the construction of sandwiches.
FINISH:Â Layer a slice of whole wheat bread with avocado spread… then simply layer remaining veggies & cheese on whatever order captures your imagination.Â Top with sprouts and last layer of bread and cut diagonally.Â Pierce with a toothpick and serve!
OPTIONAL:Â Spread a bit of low-fat mayo on top layer of bread. (watch out for the fat!)
