Three Pepper Fajita recipe is quick, filling, healthy, easy, and delicious!  Ole!



2 Tbsp olive oil
1 red pepper, sliced into strips
1 yellow pepper, sliced into strips
1 green pepper, sliced into strips
1 red onion, sliced
Optional:  Zucchini, Mushrooms, Potatoes and broccoli.

8-10 whole wheat tortillas


1 tsp cumin
1 tsp chili powder
½ tsp salt

optional toppings:
shredded monterey jack or cheddar cheese
sour cream or plain yogurt
